What's cookin'?!

Happy Hump Day!

Not much is going on around here. Just finishing up work and getting ready to head to Boston to see my family for a few days! We have what we call "faux Christmas" with my parents before PJ and I head back to New Jersey to spend the actual Christmas holiday with his family. Although I'm not looking forward to the drive, I'm definitely looking forward to spending some time with my fam.

Aside from my disastrous Sunday cooking debacle, I haven't update you on what's been going on in my kitchen lately.

Although this pic is not the best, I have to say that I absolutely loved this hearty bowl of goodness that I enjoyed last Thursday evening. Typically, I have a loose plan for what I will make for dinner during the week, and by Thursday evening, I usually whip up a mish mosh of everything left in the fridge. PJ had dinner plans, so I used leftover roasted brussels and butternut squash combined with quinoa and asiago cheese to make a meal. I topped the dish off with a friend egg. In my opinion, a runny egg makes most things taste good.

All pics dec2013 1526Monday night was salsa verde chicken tacos served with a mixed bean salad. I've made these super easy tacos many times, and I'm always satisfied with the spicy kick the salsa verde sauce gives the chicken. The only prep required for this dish is placing the chicken breasts in the crock pot and topping them with pre prepared salsa verde. You cook on low for 2 hrs, shred the chicken, and voila!

The top pic is PJ's plate. I chose to make my meal into more of a taco bowl and had beans and chicken topped with some yummy Mexican cheese! The bean salad was just a combo of red beans, black beans, corn, chopped red pepper, cilantro, onion, lime juice, olive oil, vinegar, and a dash of agave!

Last night, we had an easy Italian dinner. Simple salad with whole wheat pasta, sauce, and white beans. This meal included two of my new fave products.

All pics dec2013 1536I picked up this awesome JAR goods sauce from the Jersey City Farmer's Market.  The sauce originated from a family owned restaurant in Jersey City that was renowned for it's delicious, homemade gravy (as the Italian's would call it!). The restaurant is now closed, but the daughter of the restaurant owner bottles and sells the sauce. I spoke with her at the farmer's market, and she was an absolutely doll. We tried it last evening with our pasta, and OMG it was delicious. For anyone interested, you can check out their website here. There are a bunch of stores that sell this sauce in New Jersey and New York City.

All pics dec2013 1534I mentioned that my pasta meal included two of my new fave products and no, it did not include chia and flax seed! I'll get to that later because this this flax seed mix is another recent fave. The dressing I am loving lately from Annie's is the green garlic you see pictured above. I usually make my own dressing because A) its so easy and B) I like to minimize the additives in my condiments. However, I like having a quick dressing on hand for my lazy days. This one rocks.

With regards to this chia/flax blend, I picked it up at the market on Sunday (I forgot items that were on my list, but of course managed to impulse buy !), and it's a great addition to my yogurt or oatmeal in the am. I love sprinkling flax meal in my cottage cheese and yogurt, and the coconut and cocoa flavor in this blend add a little sweetness. I haven't seen this mix before, but I'm sure you can order it online if you don't see it at your regular market.

I'm going to change lanes now and ask for your input. When I first started blogging, I took pictures of most meals that I ate. I certainly didn't photograph everything, but I snapped pics of a lot of food. I decided I don't really like doing this. First off, I don't think it's healthy or beneficial for other people to compare what they eat to what I eat (and vice versa). Everybody's nutritional needs are different, and these needs can and will vary from day to day. While I plan on snapping pics of yummy meals that I make, I'm not going to be taking pics of everything. I mean really, who cares what I had for breakfast. Also, I don't really feel like taking pictures of my bowl of cereal every morning. When I initially started blogging, I noticed a lot of other bloggers recorded their daily eats, so I followed suit. I feel that I now have a blogging "clean slate" if you will, so I'm going to switch things up a bit. Some bloggers do a "What I Ate Wednesday" post. Would anyone want to see this? I might try it for a couple weeks and see what you all think. PLEASE feel free to leave comments for me on the blog. I'm going to try to make the comments section a little more user friendly in the next couple of weeks, but I would love your feedback!
