So with regards to yesterday's post, I was referring to pictures that apparently did not show up when you clicked the link to read. My apologies! I'm not quite a wizard yet when it comes to this WordPress stuff! If you're curious, I did update my last post with the actual images. Better late than never :)
So, more on wasting and saving. As I said yesterday, a part of the reason I hate throwing out food is that I feel like I'm throwing $ in the trash and just being plain wasteful, and the other reason may have something to do with the fact that I was kind of hungry for a good chunk of my life. I chose to be hungry, but that still didn't make it more fun. I'm not someone that believes in eating past comfort in order to avoid wastefulness. I know that I can't send my leftovers to starving children, but somehow I feel better if it's not in the trash until its inedible. I know, I know. Ok, so now that I have made myself sound like a total nut, let me talk about some ways that I re purpose.
Roasted butternut squash, 3 (hehe) leftover brussel sprouts, garbanzo beans, avocado, cucumber, green onions, vinaigrette.
If you read this post, you know that I'm not a huge fan of leftovers. The thought of making a big batch of something to eat off of for the week while practical, seems less than thrilling to me. Now, If that was my only option because of extremely long hours at work etc., clearly I would get over it. I know for may of you, this is how you manage to eat healthfully and avoid eating out during the week. If it works for you, awesome. While I wouldn't want to eat the same thing for dinner every night of the week, I am a fan of making a big batch of something and then transforming it into different meal throughout the week. Let me explain.
Enchiladas, baby.
On Sunday night, I made butternut squash and black bean enchiladas. PJ needs meat in his meals, so instead of cooking/shredding chicken to add to the dish, I pre planned to use some of the leftover pork from the slow cooked pork with Caribbean salsa in his enchis. Also, I roasted the extra butternut squash that the recipe did not call for, sliced it, and I have been using it on my lunch salad creations this week.
Another way I re purpose to avoid eating the same meal twice is by making a big salad for my lunch the following day topped with leftover dinner ingredients. I have to stop eating my food before I photograph it, but this was greens topped with the Farro Salad I mentioned a few days ago. I also added pecans and canned garbanzo beans. I brought a side of whole grain crackers to snack on, and I was a happy gal.
Last night's meal was perfect for the single digit temperatures we were experiencing yesterday in New York and New Jersey. Creamy tomato orzo soup with a simple grilled cheese sang. There is a little bit of soup leftover and if we don't eat it by tomorrow, into the freezer it goes. Btw, this soup was amazing. Instead of using heavy cream, the recipe calls to substitute Greek yogurt. I also added some red pepper flakes to give it a little kick. PJ loved it too.
It's all about taking a little bit of time to plan, kids. I know that this is easier said than done for a lot of us, and I certainly know that the rules change when you add kids into the mix! I'm assuming that I will be almost exclusively a crock pot connoisseur by that point in my life. Also, if you have looked at any of the recipe links I have provided, you will see that most of them lead you to a site called SkinnyTaste. I use this site primarily because it has great tasting recipes with a healthy spin, and these recipes are EASY. They are not 6 bajillion ingredient creations. As you know by now, I just cannot be bothered with overly involved recipes during the week. While I do have a few other places that I snag recipes from, I would LOVE your recommendations for sites or blogs where you find easy, creative, and delish recipes. Too bad you don't have a large outdoor garden that would benefit from a compost bin! My parents used one when I was younger and it was a great way to repurpose all those leftovers into nutritious soil. #cityproblems
