WIAW: Noodles

Hey There,

How are ya? I'm doing pretty well this morning.

I love getting up early and enjoying some coffee, my Dorothy socks, and the quiet. I used to  rise at the bum crack of dawn to hit the gym before the workday started, but I've decided that it's kind of nice to have some chill time before the craziness of the day ensues. Also, I tend to  find that if I practice yoga early in the morning, I get a little too relaxed (aka I fall back asleep on the floor while is Shavasana) and have trouble getting on with my day. Early morning nap time is great on a Sunday, but not on a weekday. On a side note, how awesome are my socks? My Dad ordered them for me from Sky Mall (In flight shopping, anyone?) of all places and they really just make me very happy. How could they not? I mean, I love Judy and slipper socks.

I figured I would try and do a what I ate Wednesday post this week. As I said a few posts ago, I  really don't want this blog to be a photo album of every meal that I eat, so I've decided to just snap the good stuff. I usually eat a bit more throughout the day than I did yesterday, but it was kind of a crazy day, so I didn't snack as much as usual. About 75% of the time, I like to keep my food healthy, clean, and wholesome. The other 25% is where I incorporate the foods that are less nutrient dense.

Breakfast

Steel cut oats with about 1 tbsp cashew butter, and 1 banana with a little extra cashew butter. For some reason my steal cut oats did not really fluff up ;(


Snack

Lunch

This picture does my salad no justice. I mixed it before I photographed and everything fell to the bottom. Spinach, 1/2 an avocado, white and black beans, , carrots, celery, peppers, and a yummy oil and vinegar dressing. I love a huge salad for lunch topped with lots of veggies and healthy fats. It's usually what I'm craving midday.


Snack

This snack did not do it for me. I almost always eat a pretty substantial snack  between lunch and dinner, but I got home late and all I had was an apple kicking around the car. I chomped on that during the drive home.


Dinner

As soon as I arrived home, I grabbed a handful of nuts (not pictured) and went to dinner with my friend Le-La at a new noodle bar in Jersey city called Urban Republic. PJ has been raving about this place, and after my experience last night I totally understand why.  Their menu is varied, and they use mostly organic and humanely raised/sustainable ingrediets. I had a ramen bowl which had tons of tender noodles swimming in a shitake broth with cauliflower, brussels, leeks, squash, and most importantly, eggs. Put a perfectly cooked egg on anything and I am sold.  This was on of those meals where you keep eating and eating and feel like you never make a dent in the dish!

Before our meal came, Le-La and I snacked on crispy bread with two delicious spreads. The one on the far left was some type of phenomenal eggplant spread.


Dessert

I came home from dinner and polished off the rest of a dark chocolate bar and sipped some tea.  Does anyone else drink yogi tea? I feel like a kid at Christmas each time I open the tea bag... I get so excited to read the thoughtful message that each tea bag has :) Seriously, these little guys have the power to change my day!

  1. First off, I LOVE the socks! I have the exact same pair, obviously!!! Mom bought them for me a while back! I also love that you eat ants on a log! One of my favs! And I can't wait to try Union Republic, so jealous!! We were destined to meet xoxo
