Merry Monday...

Oh, hey there!

I hope everyone had a wonderful (bearable) start to their week! I sure did. It was tough getting back to the grind after some time off from work, but we all gotta make a buck, right?

Yesterday I said I was whippin' up some easy peasy turkey burgs for dinner. My mom and I call it a "dump" recipe. Literally, you just dump everything in the bowl, mix, cook, and voila! My type of weeknight meal. These turkey burgs are a staple in my house (aka. closet sized apartment). As I stated in my first post, I do love the process of cooking. With that said, I don't want to spend hours puttering around in the kitchen. Anyone who knows me well is aware that I am not very patient! I am NOT looking to create a test kitchen over here and I bet many of you feel the same way. We want easy and delicious, right? The recipes I typically choose have a few great ingredients, don't involve a ton of prep, and are nutritious. I feel my best when I eat meals packed with nutrients! Also, I get more mileage (um..tummy not rumbly 30 min later) when I include a starch, protein, and healthy fat. My goal is to cook dinner 3-4 nights per week. After all, I love dining out as much if not more! :)

Without further adieu, I present to you:

Lynnie's Famous Turkey Burgers

 

1 lb ground turkey (packages usually average about 1.25 lbs, just bump the other

ingredients up a bit)

1 whisked egg white

1 tablespoon ketchup (or tomato sauce, V-8…whatever you’ve got)

1 tablespoon Dijon mustard

2 tablespoons white wine (I use white vermouth)

1 tablespoon of Worcestershire sauce (or soy sauce)

1 tablespoon of olive oil

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon Montreal Steak Seasoning (McCormick)

Cilantro, a good-sized fistful, finely chopped

2-3 scallions, finely chopped (or ¼ cup chopped onion)

½ c oats soaked in milk for 5-10 minutes and then drained)

 

Gently blend ingredients together (do not over mix).  Form into 4-5 burgers. If you’ve got time, refrigerate burgers for 1 hour to firm up before cooking. Spray surfaces with cooking spray. Grill on BBQ or grill pan, flipping as the first side releases.  Be careful not to over cook as they will dry out. Remove at a temp of 160 degrees in center.  Let burger rest loosely covered with foil for 5-10 minutes so juices redistribute and internal temp rises to 165 degrees. Serve on whole-wheat roll with sliced tomato, avocado, pepper-jack cheese and arugula.  A great condiment would be a spicy Sriracha Mayo or Dijon mustard.

I served them on half a sprouted grain English muffin topped with stone ground Dijon mustard.

I kind of botched my grocery shopping this week as travel plans and a holiday threw me off my regular routine. I used what I had to make healthy and delicious sides for both PJ and I.

I made PJ a cool little cucumber salad with a Chobani based Greek inspired dressing.

I wasn't starvin' marvin' after my fabulous lunch yesterday, however I did need a snack before I went to bed!

These turkey burgers are so easy. To be honest, I don't use a recipe anymore. Actually, when my mother sent me the recipe I realized I left a couple of things out and added some other things in. Guess what? They tasted just as yummy!

After work today I FINALLY went to the Jersey City Farmer's Market. As pathetic as this sounds, I have been saying "I'm going to go this week... I swear" for the past 2.5 years. Well, I am so glad I did.

I headed to a pre- din din yoga class which was EXACTLY what I needed after yesterday's Soul (sweat) Cycle. I came home and threw a farm to table dinner together!

Oh , one more random thing. I LOVE coffee. Before I go to bed I actually visualize how delicious it will be in the AM. Addict? I think so.

With that said, I am going to bed to dream about having that hot cup-a-joe in the morning. Sweet dreams, angels!
