"Oh, what a wonderful ... weekend" :)

Hello all my little muffins! I hope you all had a fantabulous weekend. It was EXTREMELY hot here in Jersey City, so I spent a lot of time inside my apartment and various eating establishments!

Friday evening, PJ and I went on a triple date with our friend LL. We attempted to see Spiderman but it was sold out. WAH. We bumped up our dinner plans and went straight over to the restaurant (which was fine because I was pretty hungs!) The restaurant was a first for me; PJ and LL had been before.  The food was pretty good, but I felt as though the atmosphere was better.Image

Saturday morning I kicked off the day with an invigorating yoga class. I chaturanga'd (new word?) and downward dogged until my little heart was content! It was just what I needed to feel grounded and strong. Namaste!

I do plan on posting some of my favorite workouts and my rather newly accepted theory on exercise later this week! Trust me, I have a lot of thoughts on this topic.

After yoga, I whipped up my FAVORITE green smoothie. Now, I am a fan of stealing shamelessly (ideas, that is!) so therefore I cannot take credit for this fabulous concoction. I'm not typically a smoothie type of gal, but I found this on a fellow bloggers website and gave it a whirl. I am so happy I did. Disclaimer: This smoothie DOES NOT taste healthy! Wheeee :) Promise me you will all give it a try. You will feel like this:

Green Monster Spinach Smoothie

Ingredients:

1 frozen sliced banana

1 Tablespoon peanut butter

1/2 cup 0% Vanilla Chobani Greek yogurt

1 cup Unsweetened Vanilla Almond Breeze (or other kind of milk)

4 cups baby spinach (or more, or less)

Directions:

Combine all ingredients in a blender and blend until smooth.

Recommendation: I choose to use frozen spinach and chop it up like ice cubes and use a fresh banana. I might stuff some additional fresh spinach in if I can fit it. Also, I add in some protein powder.

This was breakfast (aka "brekky" in my house): 2 egg whites, 1 whole egg, chopped veggies, and a sprouted grain english muff! Perfecto!

PJ recently opened my eyes to microwaving my eggs. We are both addicted. You get the fluffiest (and yummiest!) little eggs! Scramble the eggs, toss in your veggies, and stick in the microwave for about 30 seconds. Take out, scramble, pop back in for 30 more seconds. Repeat until you achieve your desired degree of doneness!

Saturday night was sushi with LL (we are clearly dating). PJ watched "the fight" (whatever this is) with the guys.

After dinner cocktails!

Let's talk cocktails. On occasion, a girl will enjoy a couple too many glasses of wine. As I am now in my later 20's (eek!) the day after tends to be a tad more difficult to deal with than when I was in college. While there is no remedy as good as prevention (Ehhem, do you need that third glass of Pinot?), I have found a semi cure. I am certainly not a doctor, but upon experimentation I do believe that taking two DayQuil in the morning works wonders! I am definitely promoting off label usage here.(woopsie!)

Sunday, lovely Sunday. Today has been fab so far. I Kicked off the day with a SoulCycle class in NYC with my bff Katie. I will discuss SoulCycle (and its awesomeness) in my fitness post later this week. We followed it up with a lovely and schweaty stroll through union square (and stumbled upon a strange witch festival..only in NYC). We stopped for an incredible lunch at Pipa, which we stumbled upon during our stroll.

I apologize for my sweaty appearance.I couldn't be bothered showering after spin, so I slapped on a sundress and called it a day. I tend to over share and I'm not going to change that on this blog. So there.

ImageImageKatie and I shared this AMAZING appy. Bacon wrapped dates stuffed with goat cheese and almond. They served these little heavenly nuggets on slices of endive! Del-ic-ious! (insert Julia Child voice).

This picture stinks, but check out all the chandeliers hanging from the ceiling. They were all for sale. Unfortunately, they were out of our price range! When we first walked by the restaurant, we thought it was a lighting store! For those of you NYC foodies, Pipa is attached to ABC kitchen (which I STILL have not been to!). I would definitely recommend this place for brunch, lunch, or dinner!

Alright kiddies, time to prep for the week! Dinner tonight will be Lynnie's Famous Turkey Burgers. Lynnie, who you will read a lot about on this blog, is my momma! :)  I'll post the recipe tomorrow!
