If you are a New Yorker, I hope you stayed dry (and awake!) on this rainy Tuesday. I know I'm not alone in saying this, but something about a rainy day makes me crave my couch, my favorite pajama pants, and a steaming hot cup of tea! Unfortunately, the blissful rainy day I envisioned was not possible today because I do have to work for a living! Luckily, I had a little something special on my schedule for lunch today that made the rain irrelevant.
My job requires me to be on the road all day, so my daily lunch break typically consists of me eating a sandwich or salad in my car. This is definitely not an ideal lunch locale, but it works. Today, my lunchtime was much more social (and way more delicious!) than usual. I attended a luncheon hosted by Eggland's Best to celebrate the launch of the fabulous Candice Kumai's new cookbook, "Cook Yourself Sexy". Candice has partnered with Eggland's Best to raise awareness in the importance of maintaining a healthy weight in the prevention of breast cancer. It is essential that we as women become proactive about our health in order to aid in the prevention of a disease that personally affects so many of us.
Just to give you all a little background about Candice, she was on season 1 of Top Chef, and she is a judge on “Iron Chef America". "Cook Yourself Sexy" is her second cookbook; her first is titled "Pretty Delicious". I personally LOVE Candice's 'FWB-Foods with Benefits' philosophy, and her ability to create recipes that taste spectacular while providing an abundance of nutrition. The recipes in both her books prove that you can create a flavorful, fun, and fulfilling meal that will also provide your body with the nutritious foods it needs to run at its absolute best!

Ok, so back to the lunch! It was held at the Bryant Park Grill (which is GORGEOUS!). The restaurant has beautiful windows that are decorated by gorgeous vines traveling up their length. I imagine that the restaurant would have been even more beautiful had the sun been shining through the windows!

Signature cocktail: Pomegranate Mimosa. Unfortunately, I did not imbibe as I was headed back to work after lunch! Bummer.
For my first course, I chose the So Cali Nicoise salad. It was scrumptious. All the recipes featured at the lunch were made with Eggland's Best eggs. As I stated in a previous post, these eggs have less saturated fat, double the Omega 3s, and more Vitamin E, compared to ordinary eggs. SCORE. Check out how big the egg yolks are in this pic! You know what they say, the bigger the yolks.... hehehe. :)
For my main course, I had the Sundried Tomato and Mushroom Frittata. YUM.
Dessert was served "family style" if you will. There were various platters , each featuring a different treat! The little slices of heaven in this picture are the strawberry cupcakes. I did sample all of the desserts and each was "super delicious" in the words of PJ.

So there you have it! Wouldn't you say this was a pretty fabulous lunch break? I met some wonderful people, and I was able to chit chat with a few friends! :) I headed back to work with a full belly and smile. Alright, kiddies! I'm off to bed. I am excited to try and share with you some of the recipes in Candice's book over the next week!
