Hi there my little bloggy friends!


I hope everyone had a nice, short week! Sometimes I feel like the shorter weeks go by even slower than a typical 7 day week because I know I have one less day and I expect the days to just fly by.I don't know if this makes sense, but whenever I have a short week it tends to crawl for me.

Anywho! Not much has been happening around here. After an eventful weekend, it has been nice to fall back into my typical work week rhythm: work, appts., cooking, yoga, and maybe some trashy tv!

Tuesday night I made a fabulous Ethiopian lentil and mustard salad that I adapted from Lisa's Kitchen.The recipe is here if you are interested! The recipe suggests using mustard seed, but I used actual whole grain Dijon mustard and mixed it with the lentils! Delish.

Typically, when I make a meal I put the effort and thought into whatever side dish I am serving. I keep the protein simple with either grilled and seasoned fish, chicken or tofu. I personally find side dishes more exciting and would rather place my focus there rather than on a complicated meat dish. This is the key for me to sticking with a regular cooking schedule. If I were to try to cook an elaborate meal every evening, I would begin to dread the process, and I would likely end up ordering Greek food every night.  By getting sassy with a side, I feel like I have accomplished something fun and tasty without spending hours in the kitchen.


Tuesday night's dinner: Lentils, kale salad, and broiled salmon with mustard and sage



My new fave brekkie: Sprouted grain english muffin with sunflower seed butter, nanner, and chia seed! Check out the mug in the background- it only seemed appropriate! haha.


Something to think about- Do you bring your own lunch to work or do you grab something out? I have always been a proponent of planning/packing my own lunch. It saves me money, and when I am hungry I don't have to worry about scrounging around for something to eat! Also, if I don't pack something, I tend to feel myself  getting hungry but don't stop to eat when I should. As you would expect, by the time I do stop for lunch I cannot help but inhale whatever is in front of me!



Awesome salad. Sweet potato, left over salmon, greens, tomatoes, peppers, and Goddess dressing.


Another fab dinner I made this week was inspired by my fabulous co-worker Katie. She had told me  that she had made a tofu dish for dinner, and I remembered that I had a block of tofu in my fridge that I had not done anything with! Now, I have said in the past I am not in love with tofu unless it is in a tofu salad. However, I found an awesome recipe and it changed my feelings toward tofu.



Balsamic glazed tofu adapted from the The Vegan Foodie. I have said this before and I will say it again: I am not a Vegan. However, I do thoroughly enjoy many of the recipes featured on the vegan blogs I follow. This tofu was SO easy and flavorful. Do yourself a favor and make this! The marinade is also great on chicken !

I served the tofu with a Roasted Eggplant Salad adapted from The Kitchn. I have made this dish a number of times over the past year and I love it more each time. It is easy, nutritious, and filling!

I have been so snacky this week. Do you ever have days or weeks when you feel like your regular portion sizes/meals don't satisfy you? I eat on a pretty regular schedule during the week (breakfast, snack, lunch, snack, dinner, maybe snack), so when I am hungry at odd times I'm very aware of it. With that said, I have had to get inventive with snacks as I don't want to eat the same thing for each snack.

Overnight Oats! I haven't made these in a while, but it's always a satisfying morning treat. There are so many variations of this brekkie if you google overnight oats. My favorite variation is linked above.

This was a very food heavy post, huh? Now I'm hungry! Last night I went to dinner at an awesome restaurant in Hoboken called  Anthony Davids. It is a BYOB joint which I love!  I have to admit, I was under the impression that Jersey City's restaurants are far better than Hoboken dining spots (I still kind of feel this way :) !), but after dinner last night I will admit that there may be a few hidden Hoboken gems. We will see!

On a side note, I was driving through the meat-packing district yesterday evening and it was a mob scene due to Fashion's Night Out festivities. I was lucky I didn't get in an accident while trying to check out the scene! I felt like there were model types all over the city (more than usual!). You know the type, their lanky legs extend all the way to where my shoulders start. I won't generalize and say that all models have eating disorders, because this would be simply untrue and presumptuous. However, we know that the modeling industry is infamous for featuring unhealthy women who are essentially hangers for whatever clothing they are draped in. With that said, I read an interesting article posted yesterday on Blisstree  about Fashion Week dieting rumors and some of the crazy measures these models are said to take in order to appear thin on the runway. I'm sure some of it is hearsay, but I believe there is a degree of truth to every rumor. I'm glad I'm not a model. Check the article out here.
