Tantilizing Tuesday...

Ok.. so it wasn't really a particularly tantilizing day,  but the word worked with Tuesday :) Today, I was thinking about the format of my blog and how I tend to talk about what I do and eat during the day. I wonder if this is boring to you all? I tend to be nosey, and I personally enjoy knowing what people are up to during their day. On one particular blog that I love, "The Fitnessista", the author(Gina) tends to go through some of her daily activities and I really enjoy getting a glimpse into her life (I'm not a creep, I swear!). With all that said, because I'm nosey and like to learn about other people, I'll continue to let you nose in on my day-to-day activities! :)


Last night, I made a great dinner that I adapted from "Oh she Glows" (another one of my fave blogs!). I had stopped at the farmers market after work, and I wanted to use all my fab produce in my dinner. This was such a filling, fresh, and satisfying dinner! The true test is PJ's approval, and I got a gold star!


Mine. I went meatless. As I've stated before, I am happily carnivorous but do enjoy the occasional veggie entrée!



Clearly, PJ did not go meatless. I would highly recommend this recipe (I'm going to post below)! The original recipe does not call for meat, but the dish is delish with some sliced chicken as well!



Back On Track Wheat Berry and Bean Salad

  • 1 cup dry wheat berries, cooked and drained

  • 2 cups/500 ml cooked navy beans (I was out so I used chickpeas!)

  • 1 English cucumber, diced

  • 1 red pepper, diced

  • 1 large tomato, diced

  • 2 large garlic cloves, minced

  • 1 cup fresh parsley, diced with large stems removed

  • 4 green onions, diced

  • Kosher salt + pepper, to taste


Dressing Ingredients:

  • 2-4 tbsp extra virgin olive oil, to taste (I used 2 tbsp)

  • 2 tbsp balsamic vinegar

  • 1 tsp hot mustard (I used regular)

  • 1 tbsp Tamari

  • 2 tbsp fresh lemon juice


Directions: In a medium bowl, soak the wheat berries overnight in cold water. The next day, drain the wheat berries and place in a medium-sized pot, covered in 3 inches of water. Bring to a boil and then reduce heat to medium and simmer for 1 hour. Drain and cool. In a large bowl, mix together the diced vegetables (cucumber, red pepper, tomato, minced garlic, parsley, green onions). Add in cooked and drained navy beans (or other bean of choice) and stir. In a small bowl whisk together the dressing ingredients (olive oil, balsamic vinegar, mustard, Tamari, fresh lemon juice). Set aside. When the wheat berries are ready, drain and rinse and then stir into the salad. Add the dressing just before serving and stir well. Now season with kosher salt and freshly ground black pepper to taste. Garnish with additional parsley if desired. Yield: 7.5-8 cups.   **Note** I did not use wheat berries as I couldn't find them! I used quinoa in my dish, and barley in PJ's (he does not like quinoa and is convinced I find a way to hide it in every dish!). I also added fresh jersey corn from the farmer's market!

Today after work, I went spinning as my fave teacher was SUPPOSED to be teaching. Substitute, again. I was actually pleasantly surprised with this substitute; she kept the energy high and the music was decent. Like I said in previous posts, my spinning experience has been tarnished after taking Soul Cycle classes. Nothing compares.


I did make an observation in today's class that I found funny and annoying at the same time. There were at least four people today checking their cell phones in the middle of the class!!!


If you can't detach yourself from your cell phone or can even THINK about checking your cell phone during a spin class  then you are A) not working hard enough or B) you should check yourself in to the cell phone addicts anonymous program (I don't know if they have one of these, but they should!). I mean, come on people, give yourself an hour to work your body and disconnect from technology! Amen.


Alright, I'm off to watch Olympic gymnastics (AMAZING!) and go to bed. I'm hoping to read a few pages of "Gone Girl". It's  totally addicting!

And it's Monday again!

Hey all!


Long time no chat. This will probably end up being a long and rambly post as I have a lot to share! Last week was one of those weeks where I just could not get out of my own way. Come on, I know you all know what I'm talking about. I had so much to do and all I could manage was to get myself to work and back and watch re-runs of the real housewives. Terrible, I know. There were multiple factors that contributed to my morose mood (ehhem I think my female friends can relate to one of them!), but I am glad I am finally chugging to the other side! I KNOW that I am a lucky girl with so many great people in my life, however nothing really illuminates just how special and wonderful the people I hold dear to me are until I am going through a rocky, moody, patch and may need a little extra lovin' from them. I'm sure you all have people like this in your life. To my special people you know who you are- I love you to pieces, and I am grateful each day for your presence in my life :)


So, I guess I'll start with some goodies from last week. I decided to give my handsome son a bath on Wednesday evening as he was frankly starting to stank. Toby is definitely not a lover of the tubby, but once you get him in there, he pathetically plops down and just lets it happen. It takes about 4 towels to dry him, and he turns into a MANIAC once free from the confines of the tub. He frolics around the apartment, running from one room to the other, wind blowing through his mane. I guess it's kind of similar to the feeling I get when I leave the hair salon with a fresh blow out, right?!



I apologize for  the demon eyes. I snapped this on my phone and could't adjust the pic. He  is kind of a little demon though so I guess the pic is fitting :)


Thursday evening I attended and AWESOME yoga class in Jersey City. The sister of one of PJ's coworkers is teaching Thursday nights at 7:00pm for $15 a class. I was very excited at the prospect of having a regular yoga class to attend as there really isn't a yoga studio in Jersey City that has a convenient class schedule or focuses on the yoga  style I enjoy. The instructor, Jaclyn, is teaching at a community space in Jersey City that is absolutely adorable and it was a perfect place to practice! I loved the flow of her class, her instruction, and her attentiveness to each individual in the class. As I have stated in previous posts, I typically do yoga from a web-based source so I don't benefit from the actual pose specific adjustments that a yoga instructor can provide. If anyone is interested in taking the class on a Thursday, send me an email and I can get you the details!


After yoga, I headed to dinner with some friends at a local restaurant called 30 Acres which is a farm to table restaurant. Their menu changes daily, and both experiences I have had there have been enjoyable. I also love that it is a BYOB establishment as I would rather choose my own bottle of vino.



Both of these wines rock ,and I have had each a number of times :)

Grilled Octopus. This was my favorite dish I had that night.



I had the cavatelli for my main dish. I thought it was good, however when my friend Le-La took a bite of it she asked me if I thought it tasted like hot dogs. It wasn't quite the same after her comment because then I too noticed a distinct hot doggy flavor. Hmmm.



If anyone saw my post last week about the importance of drinking out of a great wine glass, you can probably guess that I was extremely disappointed when this glass showed up at my table. Worst. Glass. Ever.


In other news, I made some great cookout worthy dishes this weekend and thought I would share the recipes as they were all fabulous!


1. Tortellini Death Salad



First off,I apologize for this horrible picture. My mac crashed and I am working on a DINOSAUR of a computer that freezes every time I  try to rotate the photo. I lost a lot  of pictures as well so this is an old pic I have of the salad, and this particular photo just doesn't do it justice. You'll just have trust me :)


ANYWAYS!  I know the name "Death Salad"  is weird but I will tell you how this recipe earned it's title. My mom developed this AMAZING antipasto salad years ago. It is delicious, easy, and a major crowd pleaser. While she was making the salad one day, she realized that along with bringing it to cookouts, the majority of the time she has made it has been to bring to someone when a family member passes away. Hence the name, death salad.. perhaps not the most tactful name? You can call it what you want!


Do yourself a favor a make this for your next cookout. I make this for EVERY cookout I go to and there is never a scrap left!


 Tortellini Death Salad


(adapted from Lynnie ! )
1-2 pkgs frozen cheese tortellini  (I usually try to fine the tri colored tortellini)


Cook the Tortellini according to pkg directions..  Drain. Rinse, Drain again.  Toss with a small amount of olive oil to stop from sticking together.  Refrigerate until chilled (overnight)

Add some or all of the following to the chilled tortellini:

1 can baby corn
1 red pepper, chopped
1-2 jars drained marinated artichokes
cherry tomatoes
salted cashews (these are important)
pitted black calamata olives
chunks/square of provolone cheese
pepperoni, or genoa salami, or prosciutto cut in pieces
salt and pepper.

Make a dressing :

Start with a good amt of pesto. (1/2 c)  Dilute it with more olive oil and add balsamic vinegar to make a tangy dressing.  Dress the salad and mix well.  Chill. Save additional dressing to add to salad before serving (usually it sucks in some of the dressing and may need a bit more)

Decorate top of salad with a fresh basil bunch in the center.

2. Panzanella



Simple, Easy, Delish. Enough Said :) You can grab almost everything you need at the farmer's market!


Panzanella Salad:


(adapted from Lynnie!)


2 large, ripe tomatoes, cut into 1-inch cubes

1 hothouse cucumber, unpeeled, seeded, and sliced 1/2-inch thick

1 red or yellow bell pepper, seeded and cut into 1-inch cubes

1/2 red onion, cut in 1/2 and thinly sliced

12 large basil leaves, coarsely chopped

Parsley, coarsely chopped

Optional: tablespoons capers, drained

For the vinaigrette:

1 teaspoon finely minced garlic

1/2 teaspoon Dijon mustard

3 tablespoons vinegar (any kind will do)

1/2 cup good olive oil

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

For the vinaigrette, whisk all the ingredients together.

Panzanella Croutons:

3 T butter

1-2 T olive oil

1 tablespoon minced garlic

2 T finely chopped parsley

6 cups cubed day-old bread (1-inch cubes)

Kosher salt, and freshly ground black pepper

Optional: 6 tablespoons finely grated Parmesan

Preheat oven to 375 degrees F and preheat a cookie sheet in it.

Melt the butter and olive oil in a large skillet over medium heat and cook until it foams. Add the garlic and cook until fragrant, about 30 seconds to 1 minute—do not brown garlic. Add the bread cubes and toss to coat with the butter/olive oil/garlic mix. Season with salt and pepper. Transfer the bread to hot baking sheet. Bake, stirring once or twice, until the croutons are crisp and lightly colored on the outside but still soft within, about 8 or 9 minutes.  Immediately sprinkle with the cheese and toss again while warm to melt the cheese.

Let cool. Store in an airtight container.

In a large bowl, mix the tomatoes, cucumber, pepper, red onion, basil, and capers. Add the bread cubes and toss the salad with the all the vinaigrette. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend

3. Key Lime Cupcakes with Blackberry Frosting



I have been DYING to make these little slices of heaven for months, and this weekend I finally did. I will say the recipe is pretty involved, but it is worth it in the end. Per my mother's advice, I always read the comments other readers post on various recipes I am thinking about making . Based on the reviews for this recipe, I cut the flour by 1/2 a cup and used preserves for the filling instead of making my own. Also, I only had almond milk so I used that in the frosting instead of regular milk. It didn't make any difference in the flavor.

**Important** The original recipe does not explain how to fill the cupcakes so I'll tell ya what I did. You slice a little circular hole (not too deep) in the center of the cupcake, plop in some filling, and put the little cupcake " hat" back over the filling hole. I tried using a knife, but the ridges were making the cake crumbly so I used ... a bobby pin. It worked perfectly! :)



Key Lime Cupcakes
recipe  adapted from Baked Perfection

makes 30 cupcakes

1 cup butter, softened
2 cups sugar
3 eggs
2 teaspoon vanilla extract
4 tablespoons key lime juice
zest of two limes
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sour cream

Preheat oven to 350 degrees Fahrenheit. Grease or paper-line 30 baking cups.

In a medium bowl combine the flour, baking soda, baking powder, and salt. In a separate mixing bowl, cream the butter and sugar. Beat in the eggs, one at a time. Add the vanilla, key lime juice and lime zest; mix well. Add the flour mixture to creamed mixture alternately with sour cream (batter will be thick). Fill muffin cups with 1/4 cup of batter. Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool completely and frost as desired.

Blackberry Filling
recipe from Baked Perfection

1 32oz container frozen blackberries
3 tablespoons sugar
Juice of one lemon
3 tablespoons cornstarch
pinch of salt

Place blackberries in a small bowl and sprinkle with sugar, let thaw. Drain blackberries, reserving liquid. Squish the blackberries and push through a fine mesh sieve to remove the seeds, set aside. Add enough water to the blackberry liquid to equal 1 cup. In a large saucepan, combine the blackberry liquid, lemon juice, cornstarch, and salt. Heat and stir until the mixture boils and thickens. Cool completely.  Refrigerate until ready to use. (This can be made several days in advance and any leftovers works well on toast, on pancakes, or mixed in plain Greek Yogurt.)

Blackberry Buttercream
recipe from Baked Perfection

2 sticks butter, softened
1 tsp vanilla extract
1/3 cup blackberry filling (seedless blackberry jam or preserves can be substituted)
pinch of salt
6 cups powdered sugar
2-3 tablespoons milk

Beat butter and vanilla until creamy. Mix in blackberry filling and salt. Add powdered sugar 1 cup at a time, beating until combined. Add milk 1 tablespoon at a time until you reach desired consistency.

I forgot to take a pic of the finished product (Whoops). I added the fresh blackberry garnish  just like the pic above. The only difference between my presentation and the original recipe was that my frosting wasn't as pink as the original. I'm guessing that's  because I used the lazy man's filling!



Speaking of the filling, I used this Sarabeth's jelly to fill my cupcakes! How lucky was I to find this?


Alright kiddies, that's all I have left for this evening. I have a busy week ahead, and I am planning on some fun activities! I'm also going to be sure to take some time to sort through the ever amounting clutter in my brain so that I can continue to make choices and changes that will allow me to be my happiest and healthiest :)

No! That’s not for you!

I’m afraid that some times you’ll play lonely games too. Games you can’t win ‘cause you’ll play against you.

All Alone!

And when you’re alone, there’s a very good chance you’ll meet things that scare you right out of your pants. There are some, down the road between hither and yon, that can scare you so much you won’t want to go on.

But on you will go though the weather be foul. On you will go though your enemies prowl. On you will go though the Hakken-Kraks howl. Onward up many a frightening creek, though your arms may get sore and your sneakers may leak. On and on you will hike. And I know you’ll hike far and face up to your problems whatever they are.

You’ll get mixed up, of course, as you already know. You’ll get mixed up with many strange birds as you go. So be sure when you step. Step with care and great tact and remember that Life’s a Great Balancing Act. Just never forget to be dexterous and deft. And never mix up your right foot with your left.

And will you succeed?

I hope you haven't forgotten about me!

Hi!


I have missed you all in my absence. As I posted this weekend, I was in Maine visiting my family and soaking up some sun, fun, and most importantly, SEAFOOD.


Friday I went for a massage, hung out by the pool with mom, and enjoyed a fabulous feast made by my mom! I will post the recipe for everything  we ate as I am going to try to make it this weekend or next week!



Cedar Plank Salmon!




Dijon potato salad with green beans! Yum.


Saturday morning, my mother, my friend Meg and I headed to the beach to relax and read some trashy mags (and perhaps some Fifty Shades of Grey?hehe). It was a perfect beach day (ya know, one with an actual breeze where you aren't soaking in a pool of your own sweat!).


After an exhausting day of reading, chatting, sunning, and sipping Lavender Lemonade (will provide recipe!), it was time for lobster!



Heaven! The place we got the lobsters is called Beach Plum Farms. They have the most amazing lobsters and steamers. You pick out what you want, they steam them, and bring them to your picnic table. It is a very bare bones place but it boasts the best lobster and steamers I have EVER had. We usually bring a nice bottle of wine and a side salad and have a nice little meal!

Before I forget, let me tell you about the lavender lemonade we enjoyed at the beach. My friend Meg brought my mother and I each the most thoughtful and well put together hostess gift when she arrived at our beach house. The package included all the ingredients for Lavender Lemonade. She premade a batch for us to enjoy at the beach and it was phenomenal. It is such a refreshing and calming beverage! Do yourself a favor a whip up a batch at home. My Mom, Dad , and I agreed it would also be delightful served with a splash of gin :)



I mean, how cute it this!


Lavender Lemonade


(adapted from the lovely Meghan Kasper)


* 5 Cups of Water


*1.5 cups of sugar


*1/4 cup Lavender (for cooking)


*1.5 cups of fresh or bottled lemon juice


In sauce pan, combine 2 cups water, sugar, and lavender. Bring to a boil, stirring to dissolve sugar. Simmer a few minutes to extract the color from the Lavender. Remove from heat and allow to cool. Strain into a large pitcher or jar. Chill. Add remaining water and lemon juice. Add ice just before serving. Float lemon slices garnished with sprigs of lavender if desired!


Saturday evening, we headed out to sing show tunes at a local bar called "The Front Porch".



I won't spend the time trying to describe the atmosphere or patrons to you as I truly belive it is something that must be individually experienced! The reason I originally started going was because on the weekends they have a one "woman" (hehe) show called "The Judy Show". This man dresses up as Judy Garland and does a one hour comedy/song routine centered around good ol' Judy. It is HYSTERICAL and "Judy" has an AMAZING voice. Anyone who knows me well is aware that I am mildly obsessed with Judy Garland. I find her to be fascinating, fabulous, and so tragic all at the same time.



Unfortunately, Judy will not be making her appearance until September this year so our experience  at the front porch was not quite the same. We still had a blast though as they played show tunes the whole night and everyone sang along. They played a string of songs from the Sound of Music which made us all VERY happy.

I was sad to see the weekend end, but I will admit I was even sadder when the bus ride home from Boston took 8 hours. Let me tell you, it is nice to have a bathroom on a bus, but two hours into the trip when the whole bus smells like the bathroom-not so nice!


This week has been standard. I have not cooked once. I am in one of those moods where I just don't feel like it.PJ and I have ordered Greek food both last night and tonight (no complaints here!). I do want to get back to cooking as I have some great recipes I want to share!

Friday Faves!

Greetings from Maine!


This is me blogging right now!


As promised, here are some of my favorite things. I am going to try to stick to five as I don't want to run out of favorite things to share :)


1. Totes adorbs sign my mom got for our cottage in Maine. It reminds me of the saying "happy as a pig in sh*t" except cuter and more beach appropriate!



2. Hydrangeas. This photo was taken at my parents cottage in Maine. I have memories from when I was little of my Grandpa bringing me fresh cut bouquets of these gorgeous flowers from his garden. Aside from their beauty, I think the memory is partly why I love them so much.


3.Red wine out of great wine glasses. This isn't my favorite wine, it's just what I'm drinking at the moment (mighty good, though!). I will do a post in the near future on the importance of sippin' out of a fabulous glass. I am a firm believer the glass itself can make a wine taste better (clearly this is all in my head, but for me it holds true!). :)


4. Armenian food (especially cooked my mother or little Armenian aunties). These are Vospov Kheyma which is combo of red lentils, bulgur wheat, onions , and spices. I can't post a recipe yet, because I haven't personally tried to make them!



My lunch today topped with the kheyma ( I only had one on the salad because I munched on about 3 before eating!) Del-ic-ious!!!



5.Anything involving salted caramel. This was the salted caramel ice cream my parents and I shared for dessert last night.


Before I head off for the evening, I will leave you with a personal experience which might give you some food for thought (no pun intended!).

I am often described as having a very bubbly and cheery personality (my boyfriend may staunchly disagree with this at times!) My dry cleaner one day giggled and told me that I am the happiest girl in the world. Did I think his statement as adorable? Yes. Was i flattered? Yes. Is he one hundred percent accurate? That would be a NO. For example, I had one of those days this week ( and it leaked into the following morning) where I was feeling kind of blah for lack of a better word. I found myself trying to plaster a smile on my face which is unlike me as I like to think I have a naturally sunny disposition. :) To put it plainly ,I was down in the dumps for no reason at all. After thinking about things for a while this is what I came up with:


Everyday is not going to be perfect. Your path to living well or whatever goal you have set for yourself is not straight; not linear. There will be days where you feel like you have taken two steps forward followed by a leap back. But guess what? Progress does not mean making perfect strides. What I have found to be one of the most important factors in making progress is discerning what can be learned from an obstacle or "bump in the road". Then, you put one foot in front of the other and keep on truckin'. Guilt and self loathing(which at the time seem like logical emotions to berate ourselves with) don't get us anywhere. Every day is a new day. You are given a clean slate and another opportunity to take care of yourself.

Hey All!

Greetings from Maine! I am here for a girls weekend with my mom and my bff!  Yay! I am going to stick to posting my Friday Faves, but I will be back later today with those!

For breakfast yesterday I made an amazing little feast. I have seen the recipe posted on pinterest and various blogs for a while now, and I was always intrigued.

 Overnight Oats




Adapted from "oh she glows"

PM Ingredients:

  • 1/3 cup regular oats

  • 1 cup almond milk, and more if needed

  • 1-2 tablespoons chia seeds

  • 1 ripe banana, peeled and smashed

  • 1/4 teaspoon pure vanilla extract


Directions: Mix together the above ingredients in a bowl and place in fridge overnight.

In the morning, remove bowl from fridge and add your magical toppings…

AM Ingredients:

  • 1 tablespoon nut butter

  • Pure Maple Syrup


Directions: Serve nut butter in a spoon and drizzle Maple syrup over top. Serve overnight oats cold.

**Note** You can make different variations of this dish by adding seasonal ingredients! For example, pumpkin in the fall! Also, if you want an extra protein punch, you can mix in some protein powder! I didn't have any vanilla extract in my pantry so I went without it. I think it would have added to the dish, but it didn't impact the flavor much in my opinion.

In other food news, yesterday for work I was on Arthur Avenue in the Bronx (aka Little Italy!) I love going to this part of my territory, however I feel as though my productivity is not very high as I spend most of my time perusing the various bakeries.








I stopped at Borgatti's for some fresh, homemade ravioli and pasta! Remember your wallet as most of the bakeries in Little Italy are cash only! Those Italians... :)

Since this is a blog about healthy living and ultimately MY path to living well, I figured I would share with you a recent "experience" I had because I feel like many people have been in the same situation.


Here it goes. So, yesterday I started the day with a web-based yoga class. It was only 30 min but left me feeling energized and refreshed. I started thinking about my previous mentality towards "quick" workouts and how much my attitude towards exercise has changed. What I now know is that workouts don't have to be a certain amount of time to be "worth it". I have struggled in the past with feeling that a 20 minute workout ( no matter what it is) isn't worth it. My thought process was "it won't do anything." However, I now know this is untrue. On Wednesday evening, I didn't feel like going to the yoga class I had planned on and spent the night vegging out and catching up on work in front of the tv. In the nature of full disclosure, I will say that there was some of that old "noise" in the back of my head saying "You should have gone to that class.You are going to be away this weekend and wont have the opportunity to exercise.You're being lazy." Truth be told,I felt like being lazy and despite some of the thoughts that came up I managed to be ok with my choice to just hang out.


When I woke up yesterday morning and was in the mood to do some yoga, I realized I only had about 30 minutes. In the past ,I would have beat myself up for not taking the class the previous night when I had more time ( I mean, clearly I gave myself a light beating the night before but nothing like what I would have in the past!). Guess what? I did thirty minutes of yoga( which is short for a yoga class) and it totally changed my mood! I felt strong,centered,and ready to conquer the day.  So there you go my friends. Twenty or thirty minutes of movement DOES do something more important than shrinking your thighs,  it changes your outlook! :)


Something to think about
Although I do love a high intensity sweat sesh once or maybe 2x per week, I have made an observation about the way these workouts affect MY body and MY appetite ( I say this because everyone is different). If I do alot of high intensity cardio, I find I am much hungrier. This isn't rocket science,people. Just like a car, it needs more fuel if you are driving it longer and faster. I find that I have trouble being mindful about what and how much I am eating if my appetite is raging. Now this is just me and what I have learned works for me. I only throw this out there because I'm sure I'm not the only one that feels crazy hungry(and tired) when they go cardio crazy.

Rain Drops Keep Fallin' on my head!

Oh, hey there! I hope everyone's week is going great. There was some crazy weather here in NYC yesterday afternoon! I have to confess, I love a good storm (when I'm inside looking out the window, that is!). I am outside a lot for my job, so I made sure to be home earlier in order to miss the monsoon. I snuggled up on the couch under a blanket and put on the Kardashians- perfect rainy day activity! For the record, I am not an avid Kardashian watcher (even though they are fellow Armenians), but I love trashy tv and a blanket when it is stormy outside.


 



Toby had no problem snuggling up for some napping and Kardashian re-runs!


Anyways, I wanted to share my dinner on Tuesday night. My mom sent me this recipe a few months ago and I kept forgetting to grab the ingredients when I was grocery shopping! Well, I remembered this week and I was happy I did.

Baked Falafel!

Recipe Description


These healthy chickpea cakes have zesty Middle Eastern flavor and are a great, quick dinner-time treat when tucked into a pita! My meat-loving fiance doesn’t even miss the meat in this flavorful, filling meal!



Preparation Instructions


Throw the chickpeas, flour, parsley, and spices into a food processor and pulse until well blended—or mash up chickpeas with a fork or potato masher and mix in spices. Then form small patties out of the chickpea mixture, about 1 1/2 to 2 inches wide and 1 inch thick.

Preheat the oven to 400ºF and place chickpea patties on a lightly greased pan and pop into the oven for 15–20 minutes.

Meanwhile, mix together the tahini and lemon juice and set aside with your other toppings (tomatoes, feta, and lettuce). When the patties are done, put them in a pita with plenty of toppings, and enjoy!

  • 2 cans (15 Oz. Size) Chickpeas

  • 3 Tablespoons Flour

  • 3 Tablespoons Parsley (optional)

  • 4 cloves Garlic

  • 2 teaspoons Ground Cumin

  • 2 teaspoons Ground Coriander

  • 1 teaspoon Chili Powder

  • ½ teaspoons Salt

  • 1 dash Black Pepper

  • 4 Tablespoons Tahini

  • 3 Tablespoons Lemon Juice

  • 3 whole Tomatoes, Diced

  • 1 block (8 Oz. Size) Feta Cheese, Crumbled

  • 1 head Lettuce

  • 12 whole Small Pitas

I made traditional Greek Salad's for PJ and I to go with the falafel pitas


 


 



I used Kale in my "Greek" salad. I'm going to give you all a tip that I picked up through reading other blogs. If anyone has tried to make a kale salad, the kale can be a little bit bitter and tough, right? If you tear Kale from stem and massage it with a drizzle of olive oil (salt, pepper, and garlic powder) and let it sit for about 10 minutes, you will be amazed at how much more  mild and delicious the kale is! Give it a whirl :)



PJ's- he had one pita with tzatiki and one with the hummus mixture the recipe suggests. We both liked the tzatiki much better as it was refreshing on top of the pita. The Tahini mixture was ok, but didn't really offer much to the dish in my opinion. I made my own Tzatiki which is so easy.  Combine greek yogurt, a little olive oil, garlic, minced cucumber, oregano and or basil and voila! You can find recipes for tzatiki if you just google search "homemade Greek yogurt Tzatiki".

I would highly recommend this recipe as it is extremely easy, nutritious, fun to make. I found that the chickpea patties by themselves were a little dry because the recipe did not call for any type of oil or chicken broth in the mixture. In the pita with the toppings you wouldn't think they were dry. Nevertheless,  I would add in a little chicken broth next time. My mother actually suggested shredding and salting some zucchini, squeezing out the moisture, and adding zucchini to the mix. You would likely not taste the zucchini, but because it is ninety-nine percent water  it would provide the moisture lacking from the dish. I love having my mom to bounce my cooking questions off of as I never would have thought of the zucchini!
